I narrow it down in this week’s Portland Press Herald wine column. One wine only: Hatzidakis Assyrtiko from Santorini. Why one? Because more than that gets distracting. Because people get weirded out by wines from Greece so let’s err on the side of simplicity. Because this wine is so distinctive, and just so damn good, that it deserves a column all to itself. It deserves, too, a place at your (garlic/herb/lemon-encrusted) table.
